When I opened my first restaurant in the late ‘80’s it began my journey into cost control. At first I utilized a number of different DOS based inventory control software packages then I utilized Squirrel POS‘s F & B software. In 1996 I purchased a copy of Optimum Control after meeting Jeff, the president, at the local trade show.
One of our stores was an ice cream franchise whose food cost was much higher than the theoretical cost of goods that the franchise company said it should be. My partners were giving me grief (they owned 2 other locations of the same concept) and they kept telling me we were over portioning. After running Optimum it turnd out we were actually under portioning. The problem was we were a new kiosk concept and our sales mix was nothing like a regular store. Boy was it nice to be able to show solid numbers and prove it wasn’t the operators fault!

Yes it takes some effort to set up the software but we have seen operators save 2% in cost of goods just by seeing problem areas when they are setting up the software. How did we do this, we have an import template that the restaurant copied their supplier items into (ask your supplier for a purchase history in excel format) and expanded to match the fields for items in Optimum. Everyone has spreadsheets (we call this death of a thousand spreadsheets) and can copy and paste. This really makes setting up the program faster and easier.
